Eat Good, Feel Good Recipe: Shrimp Stir Fry Recipe

I have a confession to make. I cannot cook. I look like a mad scientist in the kitchen putting random concoctions together. But something changed once I started living on my own and buying my own groceries. I became a better cook! Like my food actually tastes good and I would actually share it with other people. Only a select few though I’m still a nervous about watching people’s faces as they take the first bite. Enough chat let’s start cookin! Below you will find the recipe for my latest Eat Good, Feel Good Meal: Shrimp Stir Fry

INGREDIENTS:

Trader Joe’ Medium Cooked Shrimp

Trader Joe’s Pre Cooked Brown Rice

Teriyaki Sauce/Marinade

Sweet Onion

Cilantro

Red Pepper Flakes

Ginger

Sea Salt/Black Pepper

Coconut Oil

PREP/COOK:

Place rice in bowl and place in microwave for 1 minute 30 seconds. Take shrimp out of bag and place in a cup of water to thaw out, this does not take long at all.  Pre-heat pan with Coconut Oil. Cut onions and ginger then toss in pan to brown. Take rice out of the microwave and add Teriyaki Sauce/Marinade, Sea Salt, Pepper,  Red Pepper Flakes, Spinach and Shrimp once thawed. Quickly stir everything together in the bowl then place in pan. Stir, fry, taste, add salt/pepper for flavor if needed. Should take 10-15 minutes to cook.
